One Pot Quorn Sausage Arrabiata

This quick and easy One Pot Quorn Sausage Arrabiata is the ultimate winter warmer. It packs a flavourful punch combining tasty Quorn Sausages with a slightly spicy tomato sauce made with chilli flakes and fresh basil. You won’t regret making this as your next mid-week dinner!

A Little Effort

Ingredients

  • 300g Quorn Vegetarian Sausages
  • 1 onion
  • 3 cloves of garlic, minced
  • 8 tbsp tomato puree
  • 375g frozen green beans, cooked in microwave
  • 500g pasta
  • Handful of fresh basil, stems finely chopped, leaves torn
  • 1 tbsp olive oil
  • 1-2 tsp chilli flakes
  • 1 litre vegetable stock
  • Salt & Pepper

Method

  1. Preheat the oven to 200ºC/Fan 180ºC/Gas 6. Place the sausages on a tray and pop in the oven, timer set to 18 minutes.
  2. Add olive oil and onion into a large non-stick frying pan. Season with salt and pepper and fry for 4 minutes.
  3. Next, add tomato puree, chilli flakes and garlic and fry for around 5 minutes, until darkened.
  4. Once darkened, pour the pasta, chopped basil stems, half of the torn basil leaves and stock into the pan. Stir to combine and cover with a lid for 10 minutes, stirring occasionally.
  5. Remove the sausages from the oven and slice into bite size pieces.
  6. Remove the lid from the pan and the stock should have absorbed into the pasta. Add the sliced sausages and cooked beans to the pan and cook for another 2 minutes without the pan lid to finish cooking.
  7. To serve, dish up and top with the remaining fresh basil and some extra chilli flakes then enjoy!
