Vegetarian Keftedes with Quorn Swedish Style Balls

These vegetarian keftedes make a delicious lunch or speedy weeknight dinner. Perfect for meal prep too, these Greek meatballs are perfect for popping in pittas, wraps or on top of a fresh Greek salad.

Start by frying the Quorn Swedish Style Balls before making the zesty sauce with egg yolk, vegetable stock and lemon juice. Serve your vegetarian keftedes with optional hot toasted pitta breads, fresh salad and a homemade tzatziki dip.

Ingredients

  • 1 x 300g Pack Quorn Vegetarian Swedish Style Balls
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon extra-virgin olive oil
  • 1 egg yolk
  • 1 tablespoon organic ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon organic ground cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 lemons, zested and juiced
  • ½ cup vegetable broth

Method

  1. Cook the Quorn Vegetarian Swedish Style Balls as per pack instructions
  2. In a little oil fry onions and garlic in a pan until translucent
  3. Add the spices and lemon zest and fry for another 30 seconds
  4. In a separate bowl whisk the egg yolk with vegetable broth and lemon juice. Add to the skillet, then add the Quorn Vegetarian Swedish Style Balls back in. Cook over medium heat for another 5 minutes until the lemon sauce thickens
  5. Serve hot in bowls with pita bread, Greek salad and Tzatziki sauce. Or serve in pita pockets as sandwiches!
