Ingredients

For the Quorn BBQ Fillet Pieces skewers:

  • 175g pack Quorn Vegetarian Chicken Fillet Pieces
  • 1 tbsp gluten free BBQ sauce
  • 1 garlic clove, crushed
  • ½ tsp smoked paprika
  • 2 small red onions, quartered
  • 8 cherry tomatoes
  • 8 sprays one calorie cooking spray

For the green goddess salad:

  • 1 head baby cos lettuce, torn
  • ¼ cucumber, sliced
  • 3 radishes, sliced
  • 1 stick celery, sliced
  • 25g edamame beans, cooked
  • 10g super sprouts
  • 1 tsp pistachio nuts, chopped

For the green goddess salad dressing:

  • ¼ small avocado
  • ½ lemon, juice only
  • ½ tbsp capers
  • 1 garlic clove
  • 1 tbsp red wine vinegar
  • 1 tbsp flat leaf parsley

Method

For the Quorn BBQ Fillet Pieces skewers…

  1. Place the BBQ sauce, garlic and smoked paprika in a small bowl. Whisk to combine. Add the Quorn Fillet Pieces and toss to coat.
  2. To create each skewer thread one marinated Quorn Fillet Piece, one quarter of red onion and one cherry tomato. Repeat and add an extra piece of Quorn to complete the skewer. Repeat to make four skewers.

For the green goddess salad…

  1. Place all of the ingredients into a bowl and lightly toss to combine. Arrange on a serving platter.

For the salad dressing…

  1. Place all of the ingredients into a blender. Add two tablespoons of water and blitz to create a smooth dressing.

To serve…

  1. Heat a non-stick griddle pan over a medium high heat. Lightly spray the griddle with low calorie cooking spray. Add the skewers and cook for three minutes on each side.
  2. Drizzle the prepared dressing over the green goddess salad.
  3. Arrange the skewers on a platter and serve with green goddess salad.
