Vegetarian BBQ Skewers with a Green Goddess Salad

These sticky vegetarian BBQ skewers are loaded with Quorn Roast Mini Fillets and perfect for BBQ season! Our seriously chicken-like Mini Fillets are skewered with veggies and served up with a vibrant Green Goddess salad, coated in a delish homemade dressing.

Simply coat your mini fillets in a simple BBQ glaze, load up your veggie skewers with tomatoes and red onion before cooking in a griddle pan.

This delicious high protein recipe is Summer on a plate! It’s ideal for BBQ season and perfect for those al fresco dining evenings!

Ingredients

For the Quorn BBQ Fillet Pieces skewers:

  • 1 pack Quorn Roast Mini Fillets
  • 1 tbsp. BBQ sauce
  • 1 garlic clove, crushed
  • ½ tsp. smoked paprika
  • 2 small red onions, quartered
  • 8 cherry tomatoes
  • 8 sprays one calorie cooking spray

For the green goddess salad:

  • 1 head baby cos lettuce, torn
  • ¼ cucumber, sliced
  • 3 radishes, sliced
  • 1 stick celery, sliced
  • 25g edamame beans, cooked
  • 10g super sprouts
  • 1 tsp pistachio nuts, chopped

For the green goddess salad dressing:

  • ¼ small avocado
  • ½ lemon, juice only
  • ½ tbsp capers
  • 1 garlic clove
  • 1 tbsp red wine vinegar
  • 1 tbsp flat leaf parsley

Method

  1. Slice the Quorn Roast Mini Fillets in half.
  2. Place the BBQ sauce, garlic and smoked paprika in a small bowl. Whisk to combine. Add the Quorn Roast Mini Fillet pieces and toss to coat.
  3. To create each skewer thread one piece of marinated Quorn Roast Mini Fillet, one quarter of red onion and one cherry tomato. Repeat to make x4 skewers.
  4. For the simple green goddess salad, place all the salad ingredients into a bowl and lightly toss to combine. Arrange on a serving platter.
  5. For the green goddess salad dressing, pop all of the ingredients into a blender. Add 2 tablespoons of water and blitz to create a smooth dressing.
  6. Heat a non-stick griddle pan over a medium high heat. Lightly spray the griddle with low calorie cooking spray. Add the prepared skewers and cook for 3 minutes on each side.
  7. Whilst the skewers are cooking, drizzle the prepared dressing over the green goddess salad.
  8. Arrange the skewers on a platter and serve with green goddess salad.
