A Four-Night Vegetarian Family Meal Plan For Just Over £30

With a little creativity and planning you can enjoy delicious and affordable family meals.
Using Quorn Fillets, Pieces and Sausages, some fresh ingredients and a handful of store cupboard essentials, we’ve developed four recipes which will serve four people for just over £30!
These recipes are super simple and will be loved by the whole family. They’re all created based on a single supermarket shop at £32.68, with zero waste leftover.
You can explore all of these recipes below, the only decision you’ll need to make is which one to make first.
Quorn Vegetarian Spanish Chicken & Rice
Quorn Vegetarian Spanish Chicken and Rice is a great family dish! With just a little prep, this tasty dish is cooked in one pan.
Basmati rice is perfect for this recipe too as it’s light, quick to cook and doesn’t lose its texture when simmered with the stock and tomatoes.
Smoked sweet paprika and dried oregano are great store cupboard essentials for adding masses of flavour without too much spice so the kids will love this too.
One Pan Quorn Vegetarian Chicken Lasagne
As far as one pot dishes go, this One Pan Quorn Vegetarian Chicken Lasagne recipe is a must have in your ‘go to’ repertoire of dishes. Unlike a traditional lasagne where everything is cooked separately and then layered up, this is a total one pan dish.
The base of this recipe is a simple tomato sauce, with added red pesto for extra flavour. Sheets of dried pasta are then broken into large pieces, stirred through and simmered in the sauce alongside Quorn Vegetarian Fillets which give the cooked lasagne a great chicken-like texture!
You will not be disappointed with the incredibly easy, creamy, cheesy topping – such a simple mix of low fat crème fraiche, grated hard cheese and mozzarella which is spooned over the top and grilled until golden and bubbling. Serve with extra vegetables or a crisp green salad for the ultimate family dinner.

Orzo pasta is a favourite at the moment. Not only is it a budget friendly store cupboard staple, it’s super easy and quick to cook! This one pan Quorn Vegetarian Sausage and Broccoli Orzo dish is so tasty, has bags of flavour from the Quorn Vegetarian Sausages and creamy garlic and herb cream cheese, plus it will take you just over 30 minutes to cook!
Quorn Vegetarian Pesto Chicken & Tomato Tart
This Quorn Vegetarian Pesto Chicken & Tomato Tart is not only seriously easy to make but tastes incredible too.
Ready rolled pastry is a gift to all cooks and when the only thing you need to do is unroll and add toppings – you have a dinner winner on your hands!
This recipe uses up everything from the shopping list, leaving no waste. We’ve used the remaining garlic & herb cream cheese left over from the Sausage and Broccoli Orzo recipe and the red pesto from the One Pot Lasagne to make a creamy sauce to spread over the pastry base.
We pan fried the Quorn Vegetarian Chicken Pieces first in a little oil, seasoned with salt and pepper and some chopped flat leaf parsley, before tossing with halved cherry tomatoes and sliced red onion.
Simply add this to the cream cheese and red pesto base, then bake until the pastry is golden and puffed up and the tomatoes are wilted and jammy. This delicious tart is perfect served with a crunchy little gem and cress Caesar style salad and makes a tasty picnic pack-up!
