Birria Tacos with Quorn Fillets

Try this vegetarian Birria Taco recipe for your next dinner party or taco Tuesday…this Mexican feast is a total crowd-pleaser! Soft wraps are filled with shredded Quorn Vegetarian Fillets slow cooked in a rich birria sauce and oozy cheese, topped with fresh onion and coriander.

This delish birria sauce is super simple to make with onion, garlic, birria paste (or dried chilli), stock and chopped tomatoes. Simply simmer with the Quorn Vegetarian Fillets before blending the sauce and shredding the Fillets. For a classic Birria taco, dip the wraps in the sauce and fill with the delicious pulled Fillets, top with cheese and fry until golden and melty.

Ingredients

  • 1 pack of Quorn Vegetarian Fillets
  • 1 onion
  • 2 garlic cloves
  • 1 tin of chopped tomatoes
  • 2 tbsp birria paste (or alternatively blend dried ancho and guajillo chillies)
  • ½ tsp oregano
  • 1 tsp paprika
  • 300ml vegetable stock
  • ½ tsp cinnamon
  • 1 bay leaf
  • 8 soft taco wraps

To garnish:

  • ½ an onion, diced
  • 15g of fresh coriander
  • 60g grated mozzarella

Method

  1. Dice the onions and cook until translucent (for around 2 minutes). Next add in your chopped garlic cloves and cook until fragrant.
  2. Add in your birria paste (or blended chillis) and cook for a couple of minutes. Add in the chopped tomatoes, vegetable stock and all your spices.
  3. Next add in the frozen Quorn Vegetarian Fillets, cover and reduce to a low heat and let this cook for around an hour.
  4. Remove the Quorn Vegetarian Fillets from the sauce and place onto a board and shred using 2 forks.
  5. Blend the sauce using a blender and add back to the pan. Heat through and then add in your shredded Quorn Vegetarian Fillets back in.
  6. Dip each of your taco wraps into the sauce and place in a frying pan on a high heat. Add the shredded Quorn Vegetarian Fillets, onion, coriander and mozzarella cheese and fold over so that the cheese melts.
  7. Serve and enjoy!
