Burrata salad with Quorn Yorkshire Ham Style Slices

This summer salad recipe is sunshine in a bowl! Trust us when we say you’ll love this fruity combo of juicy grilled peach slices with creamy burrata cheese and Quorn Yorkshire Ham Style Slices.

Ready in just 15 minutes this burrata salad is so simple to make. Combine the dressing ingredients and fry the peach slices until charred. Arrange rocket and basil into a bowl and top with the burrata and peaches and tear over slices of Quorn Yorkshire Ham Style Slices, delish!

This is the perfect summer BBQ side, tasty lunch or a quick light dinner and is perfect for sharing.

Ingredients

  • 1 pack of Quorn Yorkshire Ham Style Slices
  • 1 ball of burrata cheese (you can also use mozzarella)
  • 2 peaches
  • 1 tbsp of olive oil
  • 3 handfuls of rocket
  • 30g fresh basil, finely chopped

For the dressing:

  • 3tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 red chilli, diced
  • ½ a garlic clove

Method

  1. Combine the ingredients to make the dressing and set aside.
  2. Halve & stone the peaches, brush with some olive oil and pan fry for a few minutes until caramelised and golden.
  3. Pop the rocket into a bowl along with the chopped basil leaves.
  4. Add the Quorn Yorkshire Ham Style Slices onto the salad, and then add the grilled peaches and burrata cheese.
  5. Remove the garlic clove from the dressing and drizzle your over the salad. Serve with crusty warm bread and enjoy!
