Ingredients
- 8 frozen Quorn Vegetarian Sausages
- 1 red pepper, cut into chunks
- 1 yellow pepper, cut into chunks
- 1 small red onion, cut into eighths
- 1 courgette, quartered lengthways and thickly sliced
- 3 sprigs thyme, leaves only
- 2 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tsp smoked paprika
- 1 tbsp tomato puree
- 1 vegetable stock cube, crumbled
- 400g tin finely chopped tomatoes
- 400ml boiling water
- 450g potato gnocchi
- 100g cream cheese
- 2 tbsp flat leaf parsley, chopped
Method

Preheat the oven to 240°C (220° fan) / 475F / gas 9.

Put the peppers, onion, courgettes and thyme in a roasting dish. Drizzle with 1.5 tbsp olive oil and season with salt and pepper. Toss well then roast for 10 minutes.

Brush the Quorn Sausages with the rest of the oil, add them to the dish and return to the oven for 10 minutes.

Transfer the Quorn Sausages to a plate. Stir the garlic, paprika, tomato puree and stock cube into the vegetables, followed by the canned tomatoes and 350 ml boiling water.

Return the Quorn Sausages to the dish and bake for 15 minutes, then stir in the gnocchi and return to the oven for 5 minutes.

Remove from the oven, stir in the cream cheese and sprinkle with parsley and serve.
