Make this easy vegetarian Ham Sandwich recipe with a quick homemade coleslaw for your next lunch!

Ingredients

For the homemade coleslaw:

  • ⅛ head white cabbage, shredded
  • ⅛ head red cabbage, shredded
  • 1 small carrot grated
  • 1 tbsp chives, chopped
  • 1 tbsp light mayonnaise
  • ½ lemon, juice only

To serve:

  • Crinkle cut crisps (optional)

Method

For the homemade coleslaw:

  1. Mix all of the ingredients in a bowl. Set to one side.

For the sandwich build:

  1. Spread the top and bottom of each bread slice with mayonnaise.
  2. Layer each sandwich with salad leaves, Quorn Vegetarian Ham Slices, tomato slices and a dollop of homemade classic coleslaw.
  3. Top with the remaining slice of bread and slice in half.
  4. Serve with crinkle cut crisps and an extra side of coleslaw (optional).

Chefs tip

We’ve used sliced bread for this recipe, but you can sub in for soft white rolls or wraps too!

If you don’t have all the ingredients for the coleslaw – shop bought is just as tasty!
