Creamy Fajita Orzo with Quorn Takeaway Buffalo Fillets

This delicious Fajita Orzo with Quorn Takeaway Buffalo Fillets is a weeknight winner ready in just 20 minutes. It’s creamy and a little bit spicy – with an extra kick from the Buffalo Fillets. You can easily make this recipe vegan by swapping the cheese and cream for your favourite vegan alternatives too!

Ingredients

  • Quorn Takeaway Buffalo Fillets
  • 1 tsp oil
  • 150g orzo
  • 1/2 a red onion, diced
  • 1/2 a red pepper, chopped
  • 2/3 garlic cloves, diced
  • 1tbsp of tomato purée
  • 300ml vegetable stock
  • 30-45ml single cream
  • 50g grated cheese of choice
  • 1tsp paprika
  • 1tsp cumin
  • 1tsp cayenne pepper
  • 1tsp oregano
  • 1tsp parsley
  • 1tsp chilli flakes
  • Salt & pepper

Method

  1. Cook the Quorn Buffalo Fillets to pack instructions. Once cooked, slice up.
  2. Meanwhile, heat a large pan on low and add the oil. Cook down the onion and garlic until fragrant and then add in the chopped red pepper.
  3. Next add in the tomato purée and stir, allowing it to cook off for around 2 minutes. Add in the seasonings and orzo and fry off for 1 minute before adding in the veggie stock. Cover with lid and cook for 10 minutes (checking and stirring as needed).
  4. After 10 minutes, the sauce should have thickened. Add in the cream and continue to stir until the orzo is cooked through and the sauce is thick. 5.Turn off the heat and add in your grated cheese.
  5. Plate up, adding the sliced Quorn Buffalo Fillets, more cheese, spring onions and fresh parsley.
  6. Enjoy!
