Lazy Lasagne Casserole

This is the easiest one pot veggie lasagne casserole you’ll EVER make! Whipped up in one pan, this delish dish has all the taste, but less washing up!

Made with Quorn Vegetarian Mince, this really is the perfect one pot dinner for a quick and easy midweek meal.

Simply fry chopped veggies and Quorn Mince, then simmer with your lasagne sheets in a rich tomatoey sauce. Add some fresh mozzarella and grill until melty and golden, then dig in!

Ingredients

  • 300g Quorn Vegetarian Meat-Free Mince
  • 1 diced onion
  • 5 diced garlic cloves
  • 250g mozzarella (drained)
  • 1 carrot
  • 1 small courgette
  • 1 pepper
  • 15g of fresh basil
  • 1 can of chopped tomatoes
  • ¼ tube of tomato paste
  • 200g lasagne sheets
  • 1 tsp dried mixed herbs
  • 300ml vegetable stock
  • 1 tbsp olive oil
  • Salt and pepper
  • 50ml red wine (optional)

Method

  1. Finely dice your carrot, courgette and pepper.
  2. Fry the garlic + onion in a little oil for a few mins until fragrant, before adding in the vegetables. Fry for several more minutes before adding in the Quorn Vegetarian Mince.
  3. Add tinned tomatoes and vegetable stock so there is enough liquid for everything to cook in. If needed, add more boiling water. You can also add in an optional splash of red wine here too.
  4. Allow to cook through for a few mins before adding a squeeze of tomato purée and seasoning to taste with salt, pepper, mixed herbs. Chop up a handful of fresh basil and throw that in there too.
  5. Loosely break up the lasagne sheets into slightly smaller pieces and place in & around the sauce. Make sure they’re covered so that they can cook in the sauce. Allow to simmer for 10-15 minutes until sheets are soft and cooked through. Adding a lid on top will help if you have one.
  6. Then place mozzarella on top and an extra sprinkle of salt, pepper + dried herbs. Transfer to heat under a hot grill for about 5-10 minutes until the cheese is all melty and golden.
  7. Scatter over fresh basil, serve up with fresh salad leaves and dig in and enjoy!
