Ingredients

  • 225g Quorn Mince
  • 1 x Old El Paso Street Vibes Barbacoa Kit
  • A drizzle oil
  • 1 small red onion, sliced
  • ½ red pepper, sliced
  • ½ yellow pepper, sliced
  • 1 small avocado, peel and stone removed
  • 50g iceberg lettuce, shredded
  • 2 tbsp. reduced fat sour cream
  • 1 lime, juice only
  • 15g pickled red onion
  • ½ green chilli, sliced
  • A handful coriander leaves

Method

  1. Heat a drizzle of oil in a non-stick frying pan over a medium heat. Add the Quorn Mince and cook for 5 minutes stirring regularly.
  2. Add the onion, peppers and Old El Paso cooking sauce sachet. Mix to combine and cook for 5 minutes stirring regularly. Set to one side and keep warm.
  3. Place the avocado in a bowl and mash. Add the Old El Paso guacamole seasoning and mix well.
  4. Place the sour cream into a ramekin. Add the lime juice and mix.
  5. Warm the Old El Paso taco wraps as per pack instructions.
  6. Add the shredded lettuce to the taco wraps, then spoon in the seasoned Quorn Mince filling and top with guacamole.
  7. Garnish the wraps with pickled red onion, green chilli and coriander leaves.
  8. Drizzle with the prepared sour cream and lime sauce and enjoy!

Chefs tip

Why not finish this dish with a handful of grated cheese and a side of tortilla chips!
