Orzo Bolognese with Quorn Mince

Switch up the classic spag bol with this Orzo Bolognese recipe in your weekly family meal plan! Made with Quorn Vegetarian Mince simmered in a tomatoey Bolognese sauce made with veggies, tomatoes and red pesto.

Simply fry your veggies until soft before adding Quorn Vegetarian Mince, stock, tinned tomatoes and orzo. Let this tasty Bolognese sauce simmer until the orzo is soft and ready to eat! Spoon into bowls and top with grated cheese for an easy midweek meal or meal prep!

Ingredients

  • 300g Quorn Vegetarian Meat-Free Mince
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 large carrot, grated
  • 1 stick celery, finely chopped
  • 300g Quorn Mince
  • 2 tbsp tomato puree
  • 400g can chopped tomatoes
  • 1 litre vegetable stock
  • 2 tbsp red pesto
  • 300g Orzo
  • 25g hard cheese, grated
  • 1 tbsp olive oil

Method

  1. Heat oil in a large saucepan or deep frying pan and cook the chopped onion, garlic, carrot and celery al together for about 5 minutes until softened.

  2. Add Quorn Mince to the pan and mix in well then add the tomato puree and cook for just a minute.

  3. Stir in the chopped canned tomatoes, vegetable stock and red pesto and simmer for just a minute then add the Orzo and cook 8 minutes.

  4. The orzo will soak up any excess liquid and you will be left with a rich, thickened mixture.

  5. Spoon into serving bowls and serve topped with hard cheese.
