Quorn Creamy Sausage Casserole

Ingredients

  • 6 Quorn Sausages
  • 2 tbsp vegetable oil
  • 1 small onion, very finely diced
  • 1 clove of garlic, crushed
  • 200ml dry cider
  • 1 vegetable stock cube dissolved in 250ml hot water
  • 1tsp dried sage
  • Small knob of butter
  • 1 tsp brown sugar
  • 2 small or 1 large dessert apple, peeled and quartered
  • 150ml single cream
  • 1/2 tbsp cornflour, dissolved in 1 tbsp of cold water
  • Salt and freshly ground black pepper to taste Fresh parsley, chopped

Method

  1. Preheat 1 tbsp of the vegetable oil over a medium/ high heat and fry the onions for 2-3 minutes, stirring frequently. Add the garlic, cider, stock and sage. Bring to the boil and then simmer for 8 minutes, stirring if necessary
  2. Meanwhile, preheat the remaining oil in a frying pan and cook the Quorn sausages for 8 minutes or until cooked, turning frequently
  3. While the sausages are cooking, melt the butter  in a non stick frying pan. Stir in the sugar until melted then add the apple pieces. Cook for 4-5 minutes until caramelised then remove from the heat
  4. Increase the heat of the casserole then stir in the cream and the cornflour, stirring continuously until thickened. Stir in the Quorn Sausages and parsley, season to taste

Serve with herby new potatoes.
