Quorn Fully Loaded Chilli Dog

Treat yourself this summer with these fully loaded chilli dogs! Succulent veggie sausages, topped with a homemade chilli and melted cheese. Garnish your vegetarian hot dogs with our favourite toppings of onion, coriander and red chilli - it’s the best way to enjoy a vegetarian hot dog! Ingredients

For the chilli:

  • 150g Quorn Mince
  • 1 tbsp oil
  • ½ small white onion, finely diced
  • 1 clove of garlic, crushed
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp chilli powder
  • 200g tinned chopped tomatoes
  • 1 tbsp tomato puree
  • ¼ tsp brown sugar
  • 1 vegetable stock cube, dissolved into 200ml boiling water

For the sweet potato fries:

  • 2 large sweet potatoes, washed and scrubbed, sliced into ½ inch sticks
  • 2 tbsp oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tbsp rosemary

For the hot dogs:

  • 4 Quorn Sausages
  • 4 brioche hot dog buns, sliced down the middle
  • 80g finely grated cheddar
  • ½ small white onion, finely diced
  • 5g fresh coriander, finely chopped
  • 1 red chilli, finely sliced

Method

  1. To make the chilli, put a saucepan on a medium heat and add the oil. Once hot, add the onions and cook for 3-4 minutes, followed by the garlic, oregano, smoked paprika and chilli powder. Continue to stir for another minute. Add the Quorn Mince, chopped tomatoes, tomato puree, brown sugar and vegetable stock. Mix well and reduce to a low heat. Simmer for 15 minutes.
  2. For the sweet potato fries, pre-heat your oven to 220ºC / Fan 180ºC/ Gas 6. Put the sticks of sweet potato, oil, salt, black pepper and rosemary in a bowl and mix well. Tip out in a single layer onto a lined baking tray and transfer to the oven to bake for 35 minutes, giving them a light toss half way through the cooking time. For the last 20 minutes, add the Quorn Sausages to the tray to cook.
  3. To make the hot dogs, place a sausage into each bun. Top with the Quorn Mince chilli, grated cheese, white onion, coriander and red chilli slices. Serve with the sweet potato fries.
