
Quorn Meatball Minestrone Soup
This hearty and comforting Meatball Minestrone Soup recipe is the ultimate soul-warming mid-week dinner idea. Rich tomatoes, macaroni, delicious Quorn Swedish Style Meatballs and lots of veggies make a perfect minestrone combination.

Ingredients
- 300g pack of Quorn Swedish Style Balls
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pepper, chopped
- 2 garlic cloves, minced
- 1 tin of chopped tomatoes
- 1 litre vegetable stock
- 1 tbsp balsamic vinegar
- 1 tbsp of dried mixed herbs
- 1 tsp sugar or sweetener
- 200g macaroni pasta
- 1 tbsp olive oil
- Salt and pepper, to taste
- Nutritional yeast flakes to garnish (optional)
Method
- In a large pot, heat some olive oil over medium heat. Add all of the chopped vegetables and garlic, and cook for 5 minutes, or until the vegetables are softened.
- Add the chopped tomatoes, vegetable stock, balsamic vinegar, sugar/sweetener, herbs and pasta to the pot. Bring to a boil, then reduce the heat and simmer until the pasta is cooked.
- Meanwhile, whilst that is cooking, prepare the Quorn meatballs as per the instructions on the pack.
- Once cooked, add the Quorn meatballs to the pot and stir to combine.
- Season with salt and pepper to taste.
- Divide into bowls and sprinkle nutritional yeast flakes on top to serve.
- Enjoy!
