Quorn Vegan Crunchy Strip Nachos

The amazing Nadia from Nadia's Healthy Kitchen has used Quorn Crunchy Strips to create this mouth-watering vegan chicken strips nachos. These vegan nachos layer Quorn Crunchy Strips, salsa, guacamole and vegan cheese for a twist on the classic dish. Perfect as an appetiser or side to a homemade fakeaway feast!

Ingredients

  • 12 Quorn Crunchy Strips
  • 180g bag tortilla chips
  • 50g vegan cheese, grated
  • For the salsa
  • 3 vine ripened tomatoes, finely chopped
  • ¼ red onion, chopped
  • 1 tbsp chopped jalapeño
  • Juice of 1 lime
  • 1 garlic clove, minced
  • Handful of fresh coriander, finely chopped
  • Salt and pepper to taste
  • For the guacamole
  • 1 avocado
  • 1 garlic clove
  • Juice of 1 lime
  • Salt and pepper to taste
  • Chilli flakes

Method

  1. Preheat your oven to 200C/180C fan.
  2. Arrange the Quorn Cunchy Strips on a baking sheet lined with parchment paper and bake for 18-20 minutes until crispy.
  3. Meanwhile, prepare the salsa and guacamole. Mix all the salsa ingredients together in a bowl and set aside. Scoop out the avocado and place into a blender along with the rest of the ingredients and blend until smooth.
  4. Arrange the tortilla chips on a baking tray. Chop each stirp into 4 chunks and scatter on top. Spoon over the salsa and sprinkle over the cheese.
  5. Return back to the oven and bake for another 10-12 minutes until the cheese has melted and bubbly and enjoy!
