Quorn Vegetarian Pieces Banh Mi

Try this veggie Banh for a quick and easy lunch or light dinner.

Our take on a Vietnamese sandwich uses succulent Quorn Vegetarian Pieces roasted in a sticky honey glaze and is loaded with plenty of fresh veggies.

Simply coat the vegetarian chicken pieces in a mix of lemongrass, garlic, soy sauce and chilli before roasting in the oven, then load into a crusty baguette with chopped fresh veggies. Top with a spicy sriracha mayo and fresh coriander.

Ingredients

For the Banh Mi Quorn Pieces:

  • 150g frozen Quorn Vegetarian Pieces
  • 1 inch lemongrass, finely chopped
  • 1 tbsp. honey
  • ½ tbsp. reduced salt soy sauce
  • 1 garlic clove, crushed
  • A pinch chilli flakes

For the Sriracha mayonnaise:

  • 1 tbsp. light mayonnaise
  • 1 tsp. siracha sauce

To Serve:

  • 2 long slices of baguette
  • ½ carrot, sliced into matchsticks
  • ¼ cucumber, sliced into matchsticks
  • 2 radishes, sliced
  • ½ small red onion, thinly sliced

To garnish (optional):

  • A handful coriander leaves
  • ½ red chilli, sliced
  • Pinch nigella seeds

Method

For the Banh Mi Quorn Pieces:

  1. Pre-heat the oven to 180°C (fan)/200°C electric/Gas Mark 6.
  2. Place the lemongrass, honey, soy sauce, garlic and chilli flakes into a bowl. Whisk to combine. Add the frozen Quorn Vegetarian Pieces and toss to coat.
  3. Place the pieces onto a baking tray lined with baking paper and bake for 10 minutes in a pre-heated oven.

For the Sriracha mayonnaise:

  1. Mix the sriracha sauce and mayonnaise in a ramekin. Set to one side.

To serve:

  1. Slice each piece of baguette in half. Spread each baguette with sriracha mayonnaise.
  2. Divide the carrot, cucumber, radish and red onion between each baguette.
  3. Top with the cooked Banh Mi Quorn Pieces.
  4. Garnish with coriander leaves, chilli slices and nigella seeds (optional).
