Sausage Mushroom and Spinach One Pot Pie

Ingredients
- 1 sheet of puff pastry
For the filling:
- 6 Quorn Vegetarian Sausages
- 1 onion
- 100g spinach
- 200g mushrooms
- 3 garlic cloves, minced
- 1 tbsp oil
- ¼ tsp black pepper
For the sauce:
- 25g butter
- 25g plain flour
- 250ml milk
- 25g grated cheddar cheese.
- ¼ tsp black pepper
- ¼ tsp paprika
- ¼ tsp garlic granules
Method
- In a heated pan, add the Quorn Vegetarian Sausages, along with 1 tbsp oil. Cover with a lid and allow to cook on a low heat for 7 minutes before turning over. Turn the sausages over and allow to cook for another 7 minutes. Remove from the pan. Cut the sausages into small circular pieces and set aside.
- Into the same pan, add garlic and onion. Sauté for 2 minutes until the onion begins to cook down. Add in the sausage pieces, mushroom, and spinach. Add black pepper and sauté for 3 minutes. Remove the filling mixture from the pan and set aside.
- For the white sauce, add butter into the pan. Allow to melt and then add the flour. Whisk together until a roux forms. Continue to cook for another 2 minutes.
- Gradually add the milk to the roux, stirring continuously until there are no clumps left and the sauce has thickened. Remove from the heat and add in black pepper, paprika, garlic granules and cheese. Stir until combined.
- Add the sausage and vegetable filling into the white sauce and combine. Transfer into an oven dish and cover with puff pastry. Crimple the sides so the dish is covered and place a few cuts across the pastry sheet to allow any air to escape.
- Place the pie into a preheated oven and allow to cook at 160 degrees for 20 minutes or until the pastry is cooked through. Enjoy!
