Slow Cooker Honey & Garlic Vegetarian Chicken

This Asian inspired, vegetarian slower cooker honey and garlic chicken recipe is deliciously easy. With just 10 minutes of prep time needed, this Honey & Garlic Chicken recipe is packed with tasty Asian flavours. Simply mix up the sauce ingredients, chop the garlic, ginger and green onions and pop it all in the slow cooker for 6 hours.

Add the Quorn Fillets straight from the freezer, along with the sugar snap peas for the final 15 minutes of cooking time. Shred the Quorn Fillets before serving, then dish up with brown rice and tenderstem broccoli for an easy weeknight meal the whole family will love!

Ingredients

  • 4 Quorn Vegetarian Fillets
  • 1 red onion, sliced
  • 4 cloves garlic, crushed
  • 1 thumb ginger, peeled and sliced into matchsticks
  • Pinch chilli flakes
  • 3 tbsp low salt soy sauce (to make this recipe gluten free, use gluten free soy sauce)
  • 4 tbsp honey
  • 100g tomato puree
  • 300ml low salt vegetable stock
  • 1 tbsp rice vinegar
  • 100g sugar snap peas, sliced
  • 2 spring onions, sliced
  • 1 tsp sesame seeds

To serve (optional):

  • Brown rice
  • Tenderstem broccoli

Method

  1. Place the onion, garlic, ginger, chilli flakes, soy sauce, honey, tomato puree and stock into the slow cooker. Place the lid on the slow cooker. Cook for 6 hours on low or 4 hours on high.
  2. Add the Quorn Vegetarian Fillets and sugar snap peas. Stir and cook for a further 15 minutes.
  3. Use 2 forks to shred the Quorn Vegetarian Fillets into the sauce. Garnish with sliced spring onion and sesame seeds.
  4. Serve with brown rice and tenderstem broccoli.
