Vegetarian Buffalo Wings n Waffles

Stack your waffles high with our moreish bites tossed in a buffalo sauce, & topped with a ranch dressing. They're perfect for weekend brunching or when you're in need of a breakfast with a bit of bite.

Ingredients
- For the waffles:
- 250g plain flour
- 1 tbsp. baking powder
- 325ml semi skimmed milk
- 30g butter, melted
- a little extra butter for cooking the waffles
- For the buffalo sauce:
- 50ml Franks Hot Sauce
- ½ tsp. Worcester sauce
- 1 clove garlic, crushed
- ½ tbsp. apple cider vinegar
- For the ranch sauce:
- 2 tbsp. light mayonnaise
- 1 clove garlic, crushed
- ¼ tsp. dried dill
- ¼ tsp. paprika
- ½ tsp. apple cider vinegar
- To serve...
- 1 pack Quorn Southern Fried Bites
- 2 spring onions, chopped
Method
For the waffles:

Place the flour and baking powder into a mixing bowl. Make a well in the centre. Slowly add the milk whisking to avoid lumps to form a smooth batter. Add the melted butter and whisk to combine.

Brush a waffle maker with a little butter and cook the waffles in batches for approximately 3 minutes. Repeat to use all the batter. *If you don’t have a waffle maker use a non-stick frying pan.
For the buffalo sauce:
- Place all of the buffalo sauce ingredients into a small pan. Add 25ml of water and stir. Bring to the boil and boil for 1-2 minutes or until thickened to a sauce consistency. Pour into a serving dish to cool.
For the ranch sauce:
- Mix all of the ranch sauce ingredients in a small bowl. Spoon into a ramekin and set to one side.
To serve...
- Cook the Quorn Southern Bites as per pack instructions. Remove from the oven and brush over the prepared buffalo sauce to lightly coat.
- Stack the waffles with a dollop of ranch sauce and Quorn Southern Bites. Sprinkle with spring onions and enjoy!
