15-Minute Creamy Cajun Chicken with Quorn Fillets

This easy Cajun chicken recipe is rich and creamy with a spicy twist. Quorn vegetarian chicken Fillets are cooked with garlic, sun blushed tomatoes and Cajun seasoning in a creamy sauce for a tasty 15-minute mid-week meal!

Serve with rice and fresh green vegetables for a deliciously easy, no-fuss dinner that the whole family will enjoy.

Ingredients

  • 4 Quorn Vegetarian Fillets
  • 10 sprays one calorie cooking spray
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 50g sun blushed tomatoes, chopped
  • ½ tbsp Cajun seasoning
  • 150g light crème fresh
  • 200ml low salt vegetable stock
  • ½ lemon, juice only
  • Coriander leaves

Serving suggestion:

  • Green beans
  • Rice

Method

  1. Place a non-stick frying pan over a medium heat. Add the cooking spray, Quorn Vegetarian Fillets and onion to the pan. Sauté for 8 minutes stirring regularly and turning the fillets to brown on both sides.
  2. Add the garlic, sun blushed tomatoes and Cajun seasoning, cook for a further 2 minutes.
  3. Add the crème fresh and stock, stir and simmer for 5 minutes.
  4. Remove from the heat and add the juice from half a lemon and garnish with coriander leaves.
  5. Serve with rice and steamed green beans (optional) or choice of vegetables and enjoy.

This recipe works just as well with Quorn Pieces.
