Ingredients

  • 300g Quorn Mince
  • 2 tbsp olive oil
  • 1 white onion
  • 1 medium carrot
  • 1 celery stick
  • 2 cloves garlic
  • 1 tbsp tomato paste
  • 60ml red wine
  • 1.5tsp Italian mixed herbs
  • 400g tinned chopped tomatoes
  • 400g gnocchi
  • 3 tbsp ricotta
  • 50g grated cheddar cheese
  • 30g mozzarella
  • Salt & pepper

Method

  1. Heat the oil in your pan and then add the finely diced onion, carrot, and celery along with the Quorn Mince. Sauté for 5-6 minutes.
  2. Add the minced garlic, followed by the tomato paste, herbs, and red wine. Cook down for another minute or two.
  3. Add the tinned tomatoes and about half of the can’s worth of water and stir into the mixture. Simmer for another 5 minutes.
  4. Add the gnocchi and 1 tbsp ricotta, stirring through until the ricotta has melted into the sauce and the gnocchi is mixed in evenly.
  5. Top the lasagne with the remaining ricotta in small spoonfuls across the top, and then scatter over the grated cheese.
  6. Grill the pan for 5 minutes until the cheese is melted and golden. Serve immediately!
