Ingredients
- 300g Quorn Mince
- 2 tbsp olive oil
- 1 white onion
- 1 medium carrot
- 1 celery stick
- 2 cloves garlic
- 1 tbsp tomato paste
- 60ml red wine
- 1.5tsp Italian mixed herbs
- 400g tinned chopped tomatoes
- 400g gnocchi
- 3 tbsp ricotta
- 50g grated cheddar cheese
- 30g mozzarella
- Salt & pepper
Method
- Heat the oil in your pan and then add the finely diced onion, carrot, and celery along with the Quorn Mince. Sauté for 5-6 minutes.
- Add the minced garlic, followed by the tomato paste, herbs, and red wine. Cook down for another minute or two.
- Add the tinned tomatoes and about half of the can’s worth of water and stir into the mixture. Simmer for another 5 minutes.
- Add the gnocchi and 1 tbsp ricotta, stirring through until the ricotta has melted into the sauce and the gnocchi is mixed in evenly.
- Top the lasagne with the remaining ricotta in small spoonfuls across the top, and then scatter over the grated cheese.
- Grill the pan for 5 minutes until the cheese is melted and golden. Serve immediately!
