Vegetarian Marry Me Chicken with Quorn Fillets

Ingredients

  • 1 pack of Quorn Vegetarian Fillets
  • 1 tbsp butter
  • 2 tsp chopped garlic
  • 10 cherry tomatoes, roasted and chopped
  • 300ml vegetable stock
  • 300ml double cream
  • 1 tsp tomato puree
  • 4 tbsp parmesan
  • 2 tbsp plain flour
  • Handful of fresh basil
  • 1 tsp oregano
  • 1 tsp chilli flakes
  • Salt & pepper

Method

  1. Coat the Quorn Vegetarian Fillets in the flour.
  2. In a large pan and melt the butter over a gentle heat. Then fry off the floured Quorn Vegetarian Fillets in the pan, cooking for a few minutes each side until golden.
  3. Remove the Quorn Vegetarian Fillets from the pan, and then add the chopped garlic, vegetable stock, double cream, parmesan, oregano, chilli flakes, salt & pepper, tomatoes & tomato purée into the pan & stir. Add more stock if required.
  4. Add the Quorn Vegetarian Fillets back in & cook on medium heat until the sauce thickens for around 10 minutes.
  5. Garnish with fresh basil and enjoy! Enjoy on it's own or spoon over pasta or rice!

Really yummy, used Greek Yoghurt instead of creme fraiche as a healthier alternative and we loved it! Definitely don't use as much as 500ml stock though.

Absolute 10/10! Advise not to use all the 500ml of water, add more tomato puree along with mixed herbs and you’re in a for a good nights tea. Will definitely be making this again!
