Vegetarian Tomato & Spicy Beef Roast Curry
This Spicy Tomato Roast Beef Curry a delicious and flavourful mid-week dinner idea. This recipe is perfect for using up any leftover Quorn Beef Roast and reducing food waste.
You could also swap this out for Quorn Vegetarian Roast or Quorn Vegetarian Steak Strips depending on what you have to use up!

Ingredients
- ½ leftover Quorn Beef Roast, cut into cubes
- 1 onion, very finely diced
- 1 red pepper, very finely diced
- 3 cloves of minced garlic
- 1 tbsp paprika
- ¾ tsp chilli powder
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp turmeric powder
- ¼ tsp nutmeg
- 1 tsp garam masala
- ½ tsp fennel powder
- ½ carton passata
- 1 can chopped tomatoes
Method
- Finely dice the onion & pepper and sauté it in olive oil.
- Add in the cubed Quorn Beef Roast once the onion and pepper are soft along with the garlic and seasonings.
- Add the passata and chopped tomatoes in and cook for 20-30 minutes with a lid on allowing the sauce to thicken.
- Serve with boiled rice and enjoy!
